SPINACH & FILO PARCELS

 

These parcels are great as entrées for a dinner party.

The size you make is over to you, eg make larger ones if planning to use as a lunch dish.

 

1 small onion, finely chopped
400 g Spinach - wash and remove stems, then chop (do not substitute with silver beat)
1   egg
200 g Cottage Cheese (not low-fat Cottage Cheese)
100 g Feta cheese, chopped small
¼ cup Parmesan cheese, grated
½ cup Tasty cheese, grated
1 cup chopped mushrooms
2 Tbspns chopped parsley
½ tspn nutmeg
½ cup Pine nuts, lightly toasted  (optional)

Salt and freshly ground black pepper to taste

 

1 x 375gm pack Filo pastry

Olive oil

              

 

Cook 

Spinach in microwave in covered dish – squeeze firmly and drain off liquid. 

Onion in microwave in covered dish - 1 min on high.  Drain off liquid.

Mushrooms in microwave in covered dish – 1 min on high.  Drain off liquid.

 

Add   

to all other ingredients, except filo pastry and olive oil.

 

Use 3 – 4 sheets of filo pastry at a time (join each sheet together by brushing or spraying the top of each sheet with Olive oil).  Cut into five lengthwise strips, pastry sideways (Landscape) –  Place approx desert spoon of spinach mixture at bottom of each portion, commence rolling over and over in the shape of a triangle until each strip is fully rolled.  Lightly brush oil over top and bottom before placing on oven tray.

 

Bake at 200 oC for 15 - 20 minutes
