LAMB SHANKS WITH PRUNES

 

 

 

4 6   Lamb Shanks
1 Tbspn Olive Oil
500 gm Beef Stock
4 sprigs Rosemary
1   Onion - chopped
1012   Prunes
4  large Brown Mushrooms - chopped
Cup Red / White wine
2 Tbspns Tomato Paste
2 tspns Garlic - minced
    Flour
    Salt and pepper
     
Roll shanks in flour and brown in olive oil prior to placing into casserole dish. Place all other ingredients on top of shanks in casserole dish.
     
Bake for 1hr @ 190oC and then a further 1 1.5 hrs @ 150oC.
