BLUEBERRY MUFFINS

 

 (If you double the quantity it makes approx 14 medium sized muffins)

 

1 Cups Flour
2 Tbspns Baking Powder
Cup Sugar
tspn Salt
1 Cup Blueberries
1   Egg
Cup Milk
Cup Cooking Oil / Light Olive Oil
     
Optional:  
1 large (or 2 small) lemons Finely grate lemon rind and add juice
   

(The lemons give the muffins a wonderful flavour)

 

 

Method

Shake together or beat egg with milk and oil. Pour liquid mixture into first 5 ingredients and add lemon rind and juice. Mix all ingredients gently together. Put spoonfuls into muffin pans and bake 20 25 minutes at 200 oC.

 

Mixture should be very moist.

 

Note: If baking in a fan forced oven reduce the temperature to 190oC
